Line two baking trays with parchment paper. Set aside.
In a medium bowl, whisk together flour, baking soda, cornstarch, and salt. Set aside.
In a large bowl, use a wooden spoon to cream butter with both sugars and vanilla extract until smooth and creamy.
Add the egg to butter mixture and mix well.
Add flour mixture to the butter mixture and stir until combined. Do not overstir.
Add Santa's secret ingredient! A generous sprinkling of joy!
Add chocolate chips and lightly fold to distribute evenly.
Use a small ice cream scoop or a tablespoon to scoop spoonfuls of dough (about 2 tablespoons) and shape them into a ball. Place a couple of extra chocolate chips on top (optional). Place on prepared baking trays.
Refrigerate the scooped cookies for at least an hour.
An hour before baking, preheat oven to 350℉. Then bake trays for 9-11 minutes or until cookies are golden around the edges.
Remove baking sheets from the oven and place on a wire rack to let cookies cool for a few minutes. Then, carefully remove cookies from trays and place directly on a cooling rack.
Enjoy with a glass of milk or mug of hot chocolate.
