Chocolate-Hazelnut Ice Cream Sandwich Cookies
These chocolate-hazelnut ice cream sandwich cookies are rich, fudgy, and incredibly easy to make with just three ingredients. Soft in the centre with lightly crisp edges, they pair perfectly with your favourite ice cream and can be rolled in nuts, chocolate chips, or coconut for a fun, crowd-pleasing treat. A simple, indulgent dessert that feels special without any fuss.
Ingredients
Ingredients for Cookies:
- 1 cup all-purpose flour
- 1 cup full-fat chocolate-hazelnut spread
- 1 large egg
- 2 tbsp mini chocolate chips (optional)
- 2 tbsdp toasted chopped hazelnuts (optional)
Filling:
- Your favourite ice cream that pairs well with chocolate-hazelnut cookies (vanilla, chocolate, fudge swirl, etc.)
- Garnish (ex. crushed cookies, chopped nuts, toasted coconut, mini chocolate chips
Instructions
- Preheat the oven to 350°F (180°C).
- Line a baking sheet with parchment paper.
- In a large bowl, combine the chocolate hazelnut spread, flour, and egg. Mix with fork until well combined and until a smooth dough forms.
- Using a small ice cream scoop, portion the dough into 14 balls. Place onto the prepared baking sheet. Lightly flatten each scoop.
- Bake for 8–10 minutes, until the edges are set and the centers remain slightly soft.
- Let the cookies rest on the baking sheet for a few minutes, then transfer them to a cooling rack to cool completely.
To Fill Cookies:
- Place a scoop of ice cream onto the bottom of one cookie. Top with a second cookie, flat side down, and gently press together. Roll the edges in chopped nuts, mini chocolate chips, or toasted coconut. Serve immediately or freeze until ready to enjoy.
Notes
For an extra special experience, create a cookie station for your guests. Bake the cookies while your guests are present. Prepare the ice cream station with garnishes. Once baked, let the cookies cool a little. Let each guest prepare their own sandwish while cookies are still warm.
