I think every Italian cook has their favouritee frittata and they’ll each swear that their recipe is the best. While I admire this pride, I tend to have looser rules about this rustic and simple dish. I use whatever vegetables I have on hand. Sometimes, I just clean out the fridge with some of the tired looking vegetables. With increased food costs, this dish becomes an economical way to feed your family. Just add a fresh green salad, a piece of crusty bread and you have a nutritious and versatile meal.
