Experience an authentic Calabrian traditional feast prepared the old-fashioned way — a true celebration of heritage, family, and whole-hog cooking...just like they did in Donnici, Calabria.

This incredible community event ...
features over 70 volunteers who dedicate many days to preparing every dish from scratch using time-honoured techniques passed down for generations.

🐖 Main Traditional Dishes

Frittule (slow-rendered pork cuts cooked in their own fat)
Scarafugli (rich pork gravy made from meat juices and bits)
Boiled Savoy Cabbage with Scarafugli
Pork Rinds & Pork Belly
Pork Tails, Hocks, Back & Side Ribs
Braciole (Calabrian-style pork meatballs)
Rapini (Broccoli Rabe)
Salad Salad
Ciccitielli (traditional glazed fried dough nuggets)

The feast begins with hot boiled cabbage generously topped with scarafugli, alongside bowls of tender frittule, pork belly, and crispy rinds. Next come platters of tails, hocks, and ribs, followed by braciole served with sautéed rapini and fresh salad.

To balance the richness, the tables are filled with pickles, hot peppers, lemon and grapefruit slices, fresh Calabrese pita bread, and seasonal clementines... a protected (PGI) seedless citrus fruit grown primarily in the Sibari and Gioia Tauro plains of Calabria. The celebration ends with the lightly glazed traditional ciccitielli prepared by a group of expert bakers...the nonne and mamme.

This is more than a meal — it’s authentic Southern Italian cooking, farm-to-table tradition, and a powerful expression of Calabrian culture brought together by family and community.

Don’t let the thought of making wontons scare you off — these little flavour bombs are surprisingly simple and unbelievably satisfying. My shortcut? Start with a good-quality Italian pork sausage — it’s already perfectly seasoned and gives the filling a rich, savoury base without any fuss. From there, a few key Asian ingredients like soy sauce, sesame oil, and ginger transform it into something that tastes like you’ve been folding dumplings all afternoon.

Whether you boil them for soup, steam them, or fry them, these wontons come together in minutes and disappear even faster. They’re the perfect example of how a clever hack and a dash of cultural crossover can turn an appetizer into something exciting — and save some money instead of ordering out.

My Fast and Furious Wontons

Ingredients:
½ carrot, peeled, grated or finely chopped
2 green onions, trimmed and finely chopped
2 Italian garlic pork sausages, casing removed
2 tbsp grated fresh ginger
1 tsp sesame seed oil
1 tsp rice vinegar
1 tbsp soy sauce
1 400g package wonton wrappers
3 tbsp water mixed with 1 tsp cornstarch for brushing on wrappers.

Directions:
Place everything in a bowl and mix very well.
Separate wonton skins, a few at a time.
Place a heaping teaspoon of filling in the center of the wonton.
Brush cornstarch water on 2 borders of the skin, covering ¼ -inch from the edge.
Fold skin over to form a triangle, removing trapped air, sealing edges.
Pinch the two long outside points together.
Add enough oil in pot to deep fry. Heat oil to 350℉ and fry a few at a time until golden. Do not crowd pot.
Drain on paper towel and serve with sauce.

Dipping Sauce - Mix together in bowl.

4 tbsp soy sauce
1 green onion, finely chopped
1 tsp freshly grated ginger
½ tsp sesame seed oil
1 tsp Stinger Hot Honey

Variations:
Replace pork with ground chicken or replace half the pork with finely chopped shrimp.

This simple strawberry cake is a great way to use seasonal berries and makes a beautiful dessert for family gatherings, BBQs, brunches, or just a treat for yourself. The batter comes together easily without a mixer, and the almond topping adds the perfect texture.

Ingredients:

Cake:
½ cup sugar
Zest of 1 lemon
2 eggs
½ cup milk
½ cup oil
1 tsp almond extract (or vanilla extract)
2 cups 00 flour (or use all-purpose flour)
1 tbsp baking powder
Pinch of salt
2 cups whole strawberries
1 tsp flour

Topping:
1 egg white
3 tbsp sugar
3 tbsp almond flour or 1 tbsp cornstarch
3 tbsp sliced almonds

Instructions:

🥣Preheat oven 350℉. Line 9” baking pan with parchment paper. Grease and flour. Set aside.
🥣In large bowl, rub sugar and zest together with fingers to infuse sugar.
🥣Add eggs and mix with whisk until sugar has dissolved and mixture has become creamy and light, about 4 minutes.
🥣Slowly add milk, then oil, whisking to incorporate.
🥣In a separate bowl, sift flour with baking powder.
🥣Spoon flour mixture into wet mixture, whisking after each addition. Set aside.
🥣Slice strawberries thinly. Blot with paper towel to absorb any liquid. 🥣Sprinkle with flour and fold strawberries into batter.
🥣Pour into prepared pan. Set aside.
🥣Prepare topping by whisking egg white in same mixing bowl (no need to wash it out). Add sugar and mix well. Then stir in almond flour and almonds. 🥣Spoon topping over surface of cake batter.
🥣Bake for about 35 - 40 minutes, or until inserted toothpick comes out clean. Remove from oven. Let rest for a few minutes, then remove from pan and allow to cool on cooling rack.
🥣Serve with vanilla ice cream and strawberry sauce (optional). Garnish with fresh mint leaves.

Sauce
1½ cups sliced strawberries
2 tbsp sugar
1 tbsp water
1 tbsp fresh lemon juice
3 tbsp toasted almond slices for garnish

Place in small pot and cook over medium heat until bubbly and lightly thickened, about 10 minutes. Remove from heat and cool. Spoon over ice cream and cake to serve.

Tocchetti di Maiale alla Pizzaiola is a beloved Italian classic with deep roots in Southern Italian cuisine, most likely originating in Naples. Inspired by the bold yet simple flavours of ...traditional pizza toppings, a zesty tomato sauce, oregano, and olive oil, this dish has found its way into kitchens across Italy. Its widespread popularity is no surprise, as it boasts effortless preparation, rich comforting flavors, a beautiful presentation, and minimal cleanup.

One of the best things about this dish is its versatility. Try it with thinly sliced veal or chicken breast. The addition of cheese adds a deeper richness, allowing you to experiment with different mild, melt-in-your-mouth cheeses. Want to add a bit of heat? A sprinkle of red pepper flakes will do the trick. A handful of fresh basil adds a bright, aromatic touch.

In this version, thin slices of pork tenderloin are quickly seared, then bathed in a fragrant tomato sauce infused with onion, oregano, and white wine. The result is a mouthwatering, comforting dish with a sauce so good it calls for "scarpetta"—that cherished Italian tradition of mopping up the last drops with a crusty piece of bread.

Best of all, Tocchetti di Maiale alla Pizzaiola is as practical as it is delicious—perfect for a cozy weeknight dinner yet elegant enough for entertaining. Serve it alongside lightly sautéed spinach and grilled Italian bread for a meal that feels both effortless and indulgent.

And don’t be misled by the name—there’s nothing fancy or fussy about pork alla pizzaiola. It’s simple, honest cooking that turns a few pantry staples into something truly special.

Tocchetti di Maiale alla Pizzaiola
(Pork Tenderloin Pizzaiola)
Level: Easy
Total time: 40 min
Active cooking time: 20 min
Yield: 4 servings

Ingredients:
1 large pork tenderloin, excess fat and silver skin removed
3 tbsp extra virgin olive oil to sear pork
3 tbsp extra virgin olive oil to make sauce
3 tbsp flour (optional or use gluten-free)
1 large onion (cooking onion or sweet vidalia), chopped coarsely
1 garlic clove, minced (optional)
125ml white wine
1 796ml can of San Marzano tomatoes or Italian imported tomatoes
70g soft cheese (ex. Imported Asiago Cheese - not the black rind Asiago cheese, mozzarella, or fontina)
Sea salt, black pepper, dried oregano
Fresh chives, parsley, or basil, for garnish
Freshly grated Parmigiano Reggiano, for serving

Instructions:
Prepare the Pork:
Preheat oven to 350°F (175°C).
Slice pork tenderloin into four equal pieces.
Using meat mallet, tenderize each piece. Place slice upright on cut side, then gently pound from center outward until evenly flattened.
Season generously with salt and pepper.
Dredge each piece in flour (optional) and set aside.
Sear the Pork:
For cast iron pans: Heat pan over high heat until hot, then reduce to medium. Add a drizzle of olive oil and immediately place pork in the pan. Sear for 3 to 4 minutes per side, then transfer to plate. It will not be cooked through.
For non-stick pans: Heat pan over medium heat with olive oil, then add pork. Sear as directed above.
Prepare the Tomato Sauce:
In same pan (without washing), add a drizzle of olive oil, followed by chopped onions, salt, pepper, and generous amount of oregano. Sauté over medium heat until softened.
Add garlic (if using) and white wine, scraping up any browned bits from pan.
Crush canned tomatoes with hands or potato masher, then add to pan. Stir and simmer for 10 minutes.
Assemble & Bake:
Return seared pork to the tomato sauce, ensuring each piece is immersed. Add any juices collected in plate.
Transfer pan to preheated oven and bake for 20 minutes, or until bubbling and pork reaches an internal temperature of 145°F (63°C).
Sprinkle shredded cheese or cheese slices over top and return to oven for a few minutes, until melted.
Serve:
Garnish with fresh herbs and grated Parmigiano Reggiano. Drizzle with a touch of extra virgin olive oil before serving.
Serve with grilled Italian bread and sautéed greens such as spinach.
