Vanilla Biscotti

Ingredients:
1 package of Marisa’s Easy Baking Mix for Biscotti
5 tbsp liquid - Choose from milk, nondairy beverage, or water.
4 tbsp fat - Choose from neutral-tasting oil, melted butter, or melted shortening.

Directions:

Preheat oven 350℉.

In large bowl, pour contents of package, being sure to empty completely.

Use fork to make well in centre. Pour liquid and fat into well.

Add extract. Use fork to mix, slowly incorporating dry ingredients until crumbly.

Begin to knead dough in bowl until mixed well and dough holds shape. If too dry, add 1 tsp of liquid.

Begin to shape dough into log.

Place log on parchment-lined baking pan. Continue rolling until log reaches 15" X 2", lightly flattening surface.

Then brush with egg wash by mixing 1 egg with 1 tbsp water in little bowl. Egg wash is optional. Sprinkle with granulated or sanding sugar. (Optional)

Bake for about 45 - 50 minutes or until golden and firm to the touch.

Let cool for 10 minutes, then remove from pan and place on cooling rack.

Before cooling completely, use sharp knife to make 1" thick slices.

Optional: To make crunchy biscotti, reduce oven to 300℉. Place slices on baking sheet, side down, and bake for 5 minutes. Flip to other side and bake another 5 minutes. Cool.

5 tbsp liquid - Choose from milk, nondairy beverage, or water.

For this version:
The zest of 1 lemon
60g unsalted pistachios
60g chopped dates

Directions:

Preheat oven 350℉.

In large bowl, pour contents of package, being sure to empty completely.

Use fork to make well in centre. Pour liquid and fat into well.

Add lemon zest. Use fork to mix, slowly incorporating dry ingredients until crumbly.

Then add pistachios and dates, tossing lightly.

Begin to knead dough in bowl until mixed well and dough holds shape. If too dry, add 1 tsp of liquid.

Begin to shape dough into log.

Place log on parchment-lined baking pan. Continue rolling until log reaches 15" X 2", lightly flattening surface.

• 1 package Marisa’s Easy Baking Mix for Ciambellone
• 260 ml liquid (milk, non-dairy beverage, or water)
• 90 ml fat (neutral oil, melted butter, or melted shortening)

➡️ Directions:
• Preheat oven to 350°F (180°C).
• Grease and flour a 21-cm tube pan (or similar).
• Pour baking mix into a large bowl.
• Make a well and add liquid and fat.
• Mix until smooth and creamy (about 2 minutes).
• Bake 45–50 minutes, until a toothpick comes out clean.
• Remove from pan and place on cooling rack.
• Cool, dust with icing sugar, and enjoy.
• Store in an airtight container. Keeps several days at room temperature.

Note:
1. Consider enhancing the vanilla flavour by adding ½ tsp vanilla extract.
